Ingredients

Chicken Piccata Recipe

2 lb of boneless skinless chicken breast sliced thin

1 tbsp of All Purpose seasoning

½ cup of flour

3 tbsp of Avacado oil

8 tbsp of butter divided in half

1 ½ cup of chicken broth

1 shallot diced

5 cloves of garlic

1 tsp of lemon zest

2 tbsp of lemon juice

2 tbsp of cappers drained

Directions

Step 1

Butterfly the chicken coat in Olive oil and season with the AP seasoning. Lightly coat the Chicken in the flour and set to the side on a wire rack.

Step 2

Heat the avacado oil and 3 tbsp of butter in a skillet. Once butter has melted, fry the chicken until golden brown about 3 minutes per side.

Step 3

Remove the chicken from the skillet and add in shallots and sauté for 3 minutes. Add in the minced garlic and sauté until fragrant then pour in the chicken broth and deglaze with a wooden spoon. Let simmer and reduce for about 5 minutes.

Step 4

Add in the lemon zest and lemon juice then capers. Then add back in the chicken and get it coated in the sauce.

Step 5

Serve over rice pasta or mashed potatoes!
