Smoked Pulled Pork Tacos

Ingredients

1 Pork Shoulder

Kosher Salt

Corse Black Pepper

½ cup diced tomatoes

4 Guajillo Peppers

4 Chile de Arbo peppers

1 can of Chipotle peppers in adobo

¼ cup of apple cider vinegar

6 clove of garlic

2 tsp Smoked Paprika

1 tsp onion powder

1 tsp Cumin

1 tsp Dried Oregano

3 tsp of Sazon

Tortillas

Mexican melting cheese

Cilantro

1 red onion diced

For the Consumé

1 ½ yellow onion dices

1 tbsp olive oil

2 tsp chili powder

¼ tsp ground cinnamon

¼ tsp cayenne pepper

2 bay leaves

6 cups of Chicken Broth

Directions

Step 1

Remove the seeds from the pepper then bring a pot of water to a boil. Add the peppers to the pot turn off the heat cover and let soak for 15 minutes.

Step 2

To a blender add diced tomatoes, a can of chipotle peppers in adobo, apple cider vinegar, garlic cloves, Smoked Paprika, onion powder, Cumin and Dried Oregano. Blend together then add in the rehydrated peppers and sazon and blend until smooth.

Step 3

Pour about 3 tbsps of the marinade over the pork shoulder covering the entire thing. Save the rest for the consume. Then season with Kosher salt and Corse Black pepper.

Step 4

Get your smoker up to 250 thrown on the pork shoulder and let cook until it reaches an internal temp of 160. Spritz with a little apple cider vinegar and water every hour. Once is reached temp. Wrap with foil and crank up the heat to 275 or even 300 and let cook until it reaches 205.

Step 5

Once it reaches 205 internal temp, Remove it from the smoker keep it wrapped and rest it in a cooler or even the oven. Let it rest for 30 minutes to an hour.

Step 6

While it’s resting, Add olive oil to a large pot then sauté the onions. Once the onions are translucent add in the remaining ingredients of the consumé bring to a boil then reduce to a simmer, cover and let cook.

Step 7

After the rest unwrap the pork shoulder and shred it with your hands. Then pour about 1/2 cup of the consumé over it.

Step 8

Get your skillet hot and dip the tortillas in the consumé. Place them in the skillet the add cheese, pulled pork onions, cilantro and more cheese. Fold it and let cook for about a minute then flip it over and let cook until tortilla begins to char.

Step 9

Served with the consumé for dipping!
