Southern Cornbread Dressing

Ingredients

For the Cornbread

1 ¼ cup of yellow Corn meal

¾ cup of flour

1 ½ tsp of baking powder

½ tsp of baking soda

¼ tsp of salt

1 cup of buttermilk

1 stick of melted butter

For the Dressing

4 tbsp of melted butter

1 cup of diced onions

1 cup of diced celery

1 ½ cup of Red and Green Bell peppers

2 cups of shredded chicken ( I used the meat I used for my chicken broth)

¼ cup of Bread crumbs

1 tbsp of poultry seasoning

1 tbsp of sage

½ tsp of pepper

1 tbsp of garlic powder

Salt to taste

4 cups of chicken broth

2 eggs beaten

Directions

Step 1

Preheat the oven to 425

Step 2

Mix the dry ingredients for the cornbread then add in the wet and stir until just combined add to a greased baking dish and cook for bake for about 25 minutes. Let cool overnight as day old cornbread is best for this recipe.

Step 3

Preheat the oven to 350

Step 4

In a large bowl crumble the cornbread and ate aside. Dice the veggies. Melt the butter in a skillet and add the veggies season with salt and pepper and sauté until tender about 5 mins.

Step 5

Season, Cook and shred the chicken

Step 6

Add the veggies, shredded chicken ans breadcrumbs to a bowl, mix then add in the poultry seasoning, sage, pepper and garlic powder. Stir in the Chicken broth. Mixture should be wet. Taste and add seasoning to your liking then mix in the beaten eggs.

Step 7

Serve while hot and enjoy!
