St. Louis Style Fried Rice

Ingredients

6 cups of cooked rice (cook day before)

3 eggs

2 shallots diced

3 bulbs of garlic minced

1 cup of bean sprouts

1 bunch of green onions diced

1 tsp of MSG (optional )

3 tbsp of vegetable oil

Salt to taste

Sauce

2 tbsp of Dark Soy

2 tbsp of light Soy

2 tsp of oyster sauce

2 tsp of Shaoxing wine

1 tsp of vegetable oil

1 tsp of sugar

Directions

Step 1

Whisk the sauce together and microwave for one minute.

Step 2

Beat the three eggs then add about 1tsp of Shaoxing wine. Heat 1 tbsp of vegetable oil in a wok or skillet then scramble the eggs and set to the side. Heat another tablespoon of olive then add in the shallots and bean sprouts and cook for 2 minutes before adding in the garlic and cooking for another minute. Set to the side as well. Heat another tablespoon of vegetable oil then add in the cooked day old rice. Stir for about 3 minutes to coat the rice in the oil and heat the rice fully. Mix in the sauce then eggs, shallots, bean sprouts and garlic. Season to taste with MSG or salt. Cook for about 5 minutes stirring continuously. Sir in green onions. Serve while hot and enjoy.
